eat & drink : farmer’s market quesadillas


I love summer because it is a time for delicious fruits and vegetables!

Last night we cooked up some farmer’s market quesadillas with fresh corn, tomatoes, cilantro, crookneck squash and poblano chiles.  They were delicious!  My friend introduced me to Fine Cooking awhile back and I have returned to this recipe time and time again.  It’s a five-star winner that’s quick, healthy and very, very tasty!  It’s also great because you can substitute other things you might have in your garden like zucchini instead of crookneck squash.


All you need is a dollop of sour cream, maybe some black beans and a bowl of fresh fruit on the side and you are ready to go!  Enjoy!
